A customer has Viking VGSC36740SS range with the broken thermostat. This is a very common issue because of Viking using soft metal as a knob mounting pin. We removed the unit from the cabinet, removed the top hood part, back wall and front panel. I reinstalled old thermostat wiring to the new one and run the capillary tube through the range inside the oven chamber. After I put all components together and slide the unit back into the cabinet. After I determined several temperature tests to make sure oven temperature is calibrated correctly.
